Kale Caesar Salad

Ingredients

  • 15 oz can of chickpeas
  • 1 tsp of paprika
  • 1 tsp of garlic powder
  • 1 tsp of basil, dried
  • 1 tsp of black pepper
  • 1/4 cup of vegetable oil
  • 1/2 cup of mozzarella, shredded
  • 1/3 cup of Caesar salad dressing
  • 4 cups of kale, finely chopped

Steps

  1. Chickpea Croutons:
  2. Heat oven to 350
  3. Mix chickpeas, spices, and vegetable oil together in a large bowl
  4. Place in a single layer on a baking sheet
  5. Bake for 20 minutes
  6. Assemble Salad:
  7. Combine kale & dressing in large bowl, massaging kale to tenderize
  8. Sprinkle with cheese & chickpeas
