Baked Fish with Lemon

Serving: 50 - 2 oz portions

Ingredients

  • 8 lbs. of Local White Fish, raw
  • 2 tsp of Paprika
  • 1 tsp of Salt
  • 1/2 tsp of Black Pepper, ground
  • 2 TB of Lemon Juice

Steps

  1. Spray parchment lined sheet pans with pan spray, or rub with a small amount of vegetable oil.
  2. Lay fish fillets on sheet pan, sprinkle evenly with paprika, salt, and pepper.
  3. Bake at: Convection Oven at 325°F for 7-9 minutes; Conventional Oven at 350°F for 9-11 minutes.
  4. Sprinkle each piece of fish with a few drops of lemon juice, and serve hot.
  5. Note: Batch cook the fish for each service period if possible, quality will suffer if held for long in warmer/steam table.
  6. Hold at 140°F or higher for service.
