Braised Cabbage and Apples

Serving: 3/4 cup (Yield: 100 servings)

Ingredients

  • 4½ cups of thinly sliced Spanish onions
  • 1/8 cup of thinly sliced garlic
  • 3 Tbsp of salt
  • 1 Tbsp of black pepper
  • 1½ cups of vegetable oil
  • 1½ cups of cider vinegar
  • 9 cups of apple juice
  • 48 2/3 cups (7.5 lbs or 3 large heads) of thinly sliced red cabbage
  • 53½ cups (8¼ pounds or 3 large heads) of thinly sliced green cabbage
  • 6 cups (1½ pounds or 3 large) of sliced apples

Steps

  1. In a tilt skillet or a large braising pan, sauté onions and garlic in the oil, salt, and pepper until soft and melted.
  2. Add the juice and vinegar. Mix in the cabbages and apples; stir until coated.
  3. Cook, stirring often, until the cabbage is soft; about 1 hour.
  4. Taste for seasoning.
