Crustless Spinach Quiche

Serving: Yield: 4 servings

Ingredients

  • 2 tsp of canola oil
  • 1 of medium yellow onion, finely chopped
  • 1 10-ounce package of frozen chopped spinach, thawed and drained
  • 1 1/2 cups of grated light cheddar cheese
  • 6 of large egg whites
  • 1 of large egg
  • 1/3 cup of non-fat cottage cheese
  • 1/4 tsp of ground cayenne red pepper
  • 1/8 tsp of salt
  • 1/8 tsp of ground nutmeg

Steps

  1. Drizzle oil in nonstick skillet over medium-high heat.
  2. Add onion; sauté for 5 minutes, or until translucent.
  3. Add spinach and stir for 3 additional minutes, or until spinach is dry. Set aside.
  4. Preheat oven to 375 degrees Fahrenheit.
  5. Lightly coat 9" nonstick pie pan with cooking spray.
  6. Sprinkle cheese in pan. Top with spinach mixture. .
  7. In a medium bowl, whisk egg whites, egg, cottage cheese, red pepper, salt and nutmeg.
  8. Pour egg mixture over spinach.
  9. Bake for 30-40 minutes or until set.
  10. Let sit 5 minutes.
  11. Cut into wedges, serve warm.
