Cucumber Chemistry: Moisture Capture with Desiccants

In this activity, students will follow a scientific experiment on cucumbers to learn about the chemistry of different substances and their ability to absorb water. To test this, students will experiment on four cucumber slices (one with salt, one with sugar, one with baking powder, and one as a control) and observe them for half an hour. Through this activity, students will learn about hygroscopic and deliquescent substances, as well as osmosis.
