Cucumber Turkey Hoagie with Yogurt Spread

Serving: 1 sandwich (Yield: 40 servings)

Ingredients

  • 4 cups of 2% Greek yogurt
  • 1 tsp of garlic powder
  • 1 tsp of cumin, ground
  • 1 tsp of black pepper
  • ¼ cup of fresh mint, chopped
  • 40 rolls of hoagie, whole grain, 6”
  • 8 lbs of turkey, deli style, roasted breast with white
  • 1 ¾ lbs of spinach, raw
  • 4 lbs of cucumber, raw, peeled

Steps

  1. Combine yogurt with garlic, cumin, pepper and mint. Stir until well combined. Can be made and in cooler 1 day ahead.
  2. Open hoagie buns on sheet pan or other work surface.
  3. Spread both sides of the bun with 1 1/2 tablespoons of yogurt mixture.
  4. Place 4 slices or approximately 3 oz of turkey on the bottom half of hoagie.
  5. Place 10 cucumber slices and a layer of spinach leaves on top of turkey. Place top of bun on the spinach. Prepare to serve.
