Fish Stew

Ingredients

  • 2 cups of olive oil
  • 4 of onions, medium, chopped
  • 2.5 TB of garlic, minced
  • 1.5 cups of parsley, fresh, chopped
  • 4 of crushed tomatoes, 14oz cans
  • 1 gallon of fish bone broth (local source: Five Way Foods)
  • 7.5 lbs of haddock, cod, or other firm white fish
  • 1/4 tsp of oregano, dried
  • 1/4 tsp of thyme, dried
  • pinch, optional of salt

Steps

  1. Heat olive oil in large pot over medium-high heat
  2. Add onion and saute for 4 minutes, add garlic, and cook for 1 minute more
  3. Add parsley and stir for 2 minutes
  4. Add tomato and cook for 10 minutes
  5. Add fish bone broth and add fish pieces
  6. Bring to simmer and cook until fish flakes apart - about 5 minutes
  7. Add seasoning
  8. Garnish with pieces of haddock or cod
  9. Serve with whole wheat bread for dipping
