Fish Vera Cruz

Ingredients

  • 2 - 10# cans of Tomatoes, Diced, Canned
  • 6 cups of Onions, Diced
  • 1.5 cups of Lime Juice
  • 2 cups of Olive Oil or Canola Oil
  • 1/4 cup of Chili Powder
  • 1/4 cup of Garlic Powder
  • 2 TB of Salt
  • 2 TB of Ground Pepper
  • 17 lbs of Fish (Flaky/White)
  • 2 cups of Cilantro, fresh, chopped

Steps

  1. In a large mixing bowl, combine tomato, onion, lime juice, oil, and seasonings.
  2. Place fish into three 2" steam table pans.
  3. Pour tomato mixture evenly over each pan.
  4. Bake uncovered in convection oven at 350°F for 15-20 minutes or conventional oven for 20-25 minutes, until fish reaches an internal temperature of 145°F.
  5. Top with cilantro and serve immediately.
