Harvest Apple Muffins

Serving: 24 muffins

Ingredients

  • 3/4 lb of zucchini, grated
  • 1/2 lb of carrots, grated
  • 1/2 lb of sugar
  • 1/4 lb of unbleached all purpose flour
  • 1/2 lb of whole wheat flour
  • 1.5 TB of baking powder
  • 1 TB of baking soda
  • 1/4 tsp of nutmeg (or cinnamon)
  • 1/4 tsp of salt
  • 1/4 lb of large eggs
  • 1/4 cup of canola oil
  • 1/2 cup of applesauce
  • 5 lbs of apples
  • 2 TB of sugar
  • 1/2 cup of lemon juice
  • 1 tsp of whole wheat flour

Steps

  1. Apple Bottom:
  2. Peel, core, and slice apples.
  3. Mix sugar, lemon juice, flour, and cinnamon in a bowl.
  4. Add apples, mix well, and set aside.
  5. Muffin:
  6. Preheat oven to 350°F
  7. Drain the grated zucchini and mix with the grated carrots.
  8. In large bowl, combine all dry ingredients.
  9. In a separate bowl, combine all wet ingredients.
  10. Gradually fold the wet ingredients and vegetables into the dry ingredients by alternating the ingredients being added. Batter will appear lumpy.
  11. Line muffin pan with paper cups.
  12. Using a #8 scoop, place apple mixture at bottom of muffin liner.
  13. Top apples with muffin mix to fill muffins 2/3 full.
  14. Bake in oven until done, approx. 35 mins.
  15. Remove from oven pan and allow to cool. Muffins can be served warm or at room temperature.
