Harvest Delight

Ingredients

  • 3 lbs of carrots, fresh
  • 3 lbs of sweet potatoes, fresh, cubed 1"
  • 3 lbs of butternut squash, fresh, peeled, cubed 1/2"
  • 1 lb of red onions, fresh, diced
  • 2/3 cup of olive oil
  • 2 tsp of sea salt
  • 4 lbs of green apples, fresh, peeled, cubed 1/2"
  • 3 TB of thyme, fresh, finely chopped
  • 3 TB of oregano, fresh, finely chopped
  • 3 TB of sage, fresh, finely chopped
  • 2 TB of rosemary, fresh, finely chopped
  • 2 TB + 1 tsp of garlic, minced
  • 1/4 cup + 1 TB of maple syrup
  • 11 oz of spinach, fresh, chopped
  • 1/3 cup of cranberries, dried, finely chopped

Steps

  1. Place carrots in a perforated steam pan. Cover and steam for 10 minutes or until tender.
  2. Toss carrots, sweet potatoes, squash, and onions with oil and salt.
  3. Line sheet pan with parchment paper and spray with pan release spray. Spread vegetables evenly on sheet pan. (Use 4 pans).
  4. Roast uncovered at 425°F for 25 minutes until tender and slightly brown. Turn vegetables once midway through roasting.
  5. Combine apples, thyme, oregano, sage, rosemary, and garlic.
  6. Remove vegetables from oven. Lower heat to 400°. Add apple mixture, spread evenly. Roast for 15 minutes.
  7. Remove vegetable & apple mixture from oven.
  8. Transfer to a steam table pan (2).
  9. Drizzle with maple syrup and toss to coat. Roast at 400°F for 8 minutes.
  10. Remove from oven, gently toss in spinach. Mix in cranberries.
