Oat Fruit Scone

Serving: Yield: 16 servings

Ingredients

  • 1 of egg
  • 1 cup of buttermilk
  • 3 Tbsp of canola oil
  • 2 tsp of orange zest
  • 1 cup of oats
  • 1 cup of whole wheat flour
  • 1 cup of all-purpose flour
  • 1/3 cup of raw sugar
  • 1 Tbsp of baking powder
  • 1 tsp of salt
  • 2 cups of fruit, a mixture of berries, cherries, peaches, raisins

Steps

  1. Preheat oven to 350 degrees. Grease a cookie sheet and set aside.
  2. Beat the egg and mix well with the buttermilk.
  3. Add the canola oil and orange zest and mix to combine.
  4. In a large bowl mix together the oats, flours, sugar, baking powder, and salt.
  5. Stir the buttermilk mixture into the dry ingredients and mix until the dough just comes together. Do not over mix.
  6. Fold in the fruit.
  7. Scoop scones onto the prepared cookie sheet and bake 10 minutes or until slightly golden on top.
