Peach Dressing

Ingredients

  • 3 TB of red wine vinegar
  • 1 tsp of thyme, dried
  • 1/2 tsp of sugar
  • 1 of peach, very ripe, peeled and finely chopped
  • 6 TB of olive oil

Steps

  1. Combine first 4 ingredients in a large bowl, stirring with a whisk.
  2. Let stand 15 minutes, stirring occasionally.
  3. Add oil slowly, stirring with a whisk until blended.
