Pear Bistro Salad

Serving: Yield: 4 servings

Ingredients

  • 1 lb of cooked, skinned chicken breast halves
  • 8 cups of assorted torn mixed salad greens
  • 2 of fresh pears, cored and sliced
  • 2 Tbsp of minced shallots or green onions
  • 1/8 cup of chopped walnuts
  • 1/8 cup of crumbled blue cheese or other cheese
  • 3/4 cup of balsamic vinegar

Steps

  1. Cut cooked chicken into strips.
  2. Line platter with greens; top with pears, chicken, shallots and walnuts.
  3. Top with cheese.
  4. Drizzle balsamic vinegar to taste over salad. Serve with crusty bread, if desired.
