Pear, Kale, and Cabbage Salad w. Citrus Dressing

Ingredients

  • of Dressing
  • 2 cups of Orange Juice
  • 1 cup of Lime Juice
  • 6 TB of Maple Syrup
  • 1 TB of Salt
  • of Salad
  • 4 bunches of Kale, Lactino or Other, Stemmed & Shredded
  • 4 heads of Cabbage, Red or Green, Shredded
  • 20 of Brussels Sprouts, Shredded
  • 16 of Scallions, sliced thin
  • 8 of Pears, sliced thin
  • 1 cup of Walnuts, optional

Steps

  1. Dressing:
  2. Combine all ingredients in bowl and whisk.
  3. Salad:
  4. In large bowl, combine cabbage, kale, scallions, and pears. Toss gently with dressing to coat ingredients. Transfer to platter, garnish with walnuts
