Strawberry Pineapple Poppy Seed Salad

Ingredients

  • of Dressing
  • 2 cups of Pineapple Juice, unsweetened
  • 1/2 cup of Lime Juice
  • 1/2 cup of Honey
  • 2 TB of Poppy Seeds
  • 4 tsp of Lime Peel, grated
  • of Salad
  • 4 lbs of Pineapple, fresh, peeled & cored or canned chunk
  • 13 of Kiwi Fruit, peeled & sliced
  • 1.5 quarts of Strawberries, fresh & sliced
  • 10 of Bananas, peeled & sliced
  • 1.5 quarts of Melon, peeled and diced or balled

Steps

  1. Place pineapple chunks in large bowl. Add kiwi, bananas, melon, and strawberries to bowl.
  2. Combine lime juice and honey in a medium bowl.
  3. Add poppy seeds and lime zest to dressing bowl. Whisk to blend.
  4. Pour dressing over fruit and toss lightly.
  5. Refrigerate at least 15 minutes to marinate.
