Apple Cranberry Coleslaw

Serving: 50 - 1/2 cup servings

Ingredients

  • 14 cups of Cabbage, shredded
  • 10 cups of Apples, chopped
  • 2 cups of Cranberries, dried
  • 1 cup of Honey
  • 1 cup of Apple Cider Vinegar
  • 1 cup of Olive Oil
  • 1/2 cup of Lemon Juice

Steps

  1. Shred cabbage.
  2. Chop apples with skin into thin strips.
  3. In a large bowl combine cabbage, apples, and cranberries.
  4. In a medium bowl whisk together honey, vinegar, olive oil, and lemon juice until emulsified into a dressing.
  5. Add dressing to cabbage mixture and stir. Hold at 41°F for service. Best served same day.
