Apple Cranberry Kale Salad

Serving: 1 cup (Yield: 60 servings)

Ingredients

  • 4 ¾ lbs of kale, fresh, trimmed, without stem
  • 4 cups of apples, diced
  • ¼ cup (and ¾ cup for dressing) of lemon juice
  • 8 oz of dried cranberries
  • ½ cup of honey
  • 1 ½ cup of canola oil
  • 2 tsp of salt
  • 2 tsp of black pepper

Steps

  1. Chop kale.
  2. Toss diced apples in ¼ c of lemon juice.
  3. Make dressing by whisking together the lemon juice, honey, salt and pepper.
  4. Slowly add in oil until dressing thickens.
  5. Add dressing to kale and toss.
  6. Add apples and dried cranberries to salad mixture and serve.
