Collard Greens Pesto

Serving: 24 (with 3lbs cooked pasta)

Ingredients

  • 1.5 cups of Basil, fresh
  • 2 of Lemon, fresh, zested & juiced
  • 1.5 cups of Vegetable Broth, low sodium
  • 1 TB of Salt, Kosher
  • 3 cups of Collard Greens, chopped & trimmed
  • 1.5 cups of Pecorino or Parmesan cheese, grated
  • 0.75 cups of Olive Oil
  • 6 of Garlic cloves, fresh & roughly chopped
  • 1.5 tsp of Black Pepper

Steps

  1. In a food processor, add collard greens, basil, cheese, lemon and lemon zest, and olive oil.
  2. Pulse all of the ingredients together.
  3. Add vegetable stock, herbs, garlic and seasonings. Mix well.
