Ingredients

  • 12 oz of Bread crumbs
  • 1.5 cups of Lemon Juice
  • 1 TB of Onion salt
  • 3/4 tsp of Black Pepper
  • 3/4 tsp of Hot Sauce
  • 1/4 cup + 2 TB of Parsley, dry
  • 6 TB of Cooking spray or Oil
  • 14 lbs 4 oz OR 75 filets of Fish (such as Cod, or other flakey white fish)
  • 5 cups of Yogurt, plain, fat-free
  • 2.25 cups of Cheddar Cheese, shredded

Steps

  1. In a bowl, mix bread crumbs, lemon juice, onion salt, pepper, hot pepper sauce, and parsley. Reserve.
  2. Oil each steam table pan (12x20x2.5) with 2 TB of oil. For 75 servings, use 3 pans.
  3. Place 25 fish portions into each steam table pan.
  4. Cover each portion with a No. 60 scoop (1 TB) of fat-free yogurt.
  5. Sprinkle 3 oz (3/4 cup) of cheese per pan on top of low-fat yogurt covered fish.
  6. Sprinkle 1 TB of crumb mixture on top of each portion.
  7. Bake: Conventional Oven > 400°F for 25 mins; Convection Oven > 350°F for 25 minutes. Fish should flake easily with fork.
  8. Hold for hot service at 135°F or higher.
