Greek Grilled Chicken Salad

Serving: 1 salad (Yield: 50 servings)

Ingredients

  • 9 lb 12 oz of romaine lettuce, shredded
  • 50 patties of rilled chicken patty, WI Processed C524, Goldkist/Pilgrim’s Pride, Commercial Eq. Code: 26624, thawed, sliced
  • 4 lb 4 oz of cherry tomatoes
  • 14 oz of black olives, whole
  • 18 oz of pepperoncini peppers
  • 6 ¼ cups of cucumber, chopped
  • 12 ½ oz of feta cheese

Steps

  1. Place 1 ½ cups of lettuce in an individual salad dish.
  2. Place 1 chicken patty, sliced, on lettuce.
  3. Garnish each with 3 tomatoes,1 pepperoncini, 1/8 cup cucumber, and 2 olives.
  4. Place 2 slices of onion and ¼ oz (1 Tbsp) of feta cheese on top of chicken.
  5. Serve with Greek Yogurt Balsamic Vinaigrette (WIDPI-30b). CCP: Hold at 41° F or lower for cold service
