Greek Turkey Pita with Tzatziki Sauce

Serving: 100 servings

Ingredients

  • 50 (cut in half) of Whole Wheat Pita Bread
  • 8 lbs. of Baby Spinach
  • 24 lbs, 10 oz. of Sliced Turkey
  • 6 cups of Greek Yogurt
  • 2 cloves of Garlic
  • 4 of Cucumbers, seeded & peeled
  • 2 TB of Dill, fresh
  • 2 lemons of Lemon juice
  • 1/2 tsp of Black pepper

Steps

  1. Cut pitas in half.
  2. Fill pita with 4 oz of sliced turkey and 1/2 cup of spinach.
  3. Make tzatziki sauce (can be made a day ahead):
  4. Cut cucumber into chunks.
  5. Place cucumber into food processor with garlic, dill, lemon juice, and pepper.
  6. Puree until well blended, then stir in yogurt.
  7. Serve with 1 TB of tzatziki sauce for dipping.
