Northwest Pear Breakfast Cookie

Ingredients

  • 9 cups of oatmeal, quick cooking
  • 6 cups of granola, plain
  • 3 cups of whole wheat flour
  • 3 cups of all purpose flour
  • 1 Tbsp 2tsp of cinnamon, ground, divided
  • 4 ½ tsp of salt
  • 1 Tbsp of baking soda
  • 1 ½ tsp of nutmeg
  • 12 cups of USA pears, cored and cut into ¼ inch cubes
  • 3 cups of canola oil
  • 4 cups of brown sugar, packed
  • 6 of eggs
  • 2 Tbsp of vanilla
  • 6 cups of raisins
  • 3 cups of nonfat dry milk powder

Steps

  1. Blend oats, granola, whole-wheat flour, flour, dry milk powder, 3 teaspoons cinnamon, salt, baking soda, and nutmeg.
  2. Toss pears with remaining cinnamon.
  3. Mix oil, brown sugar, eggs, and vanilla for 30 seconds until blended. Add oat and flour mixture and stir until blended.
  4. Add pears and raisins and stir until just combined. Do not over-mix.
  5. Form dough using 1/4 cup or #16 scoop and place on 4 parchment-lined 18 x 26 x 1-inch sheet pans.
  6. Bake in conventional oven at 375 degrees for 18 to 23 minutes until edges are set and top is golden brown. Cool 3 minutes and remove from sheet pans.
