Not-So-Canned Salsa

Serving: ¼ cup (Yield: 100 servings)

Ingredients

  • 1 #10 can of salsa
  • 5 lbs of tomatoes
  • 1 cup of onion, chopped
  • 2 Tbsp of garlic, chopped
  • 1/2 cup of lemon juice
  • 1 cup of sofrito*
  • ¼ cup of cumin, ground
  • ¼ cup of coriander, ground
  • 1 cup of cilantro, chopped

Steps

  1. Blend all ingredients together, in batches, in a food processor until a smooth paste forms. If needed, add a cup of water to puree the ingredients.
