Pear and Cabbage Slaw

Serving: Yield: 100 servings

Ingredients

  • 6 cups of low fat mayonnaise
  • 6 cups of low fat plain yogurt
  • 2 cups of rice wine vinegar
  • 3 Tbsp of sugar
  • 2 Tbsp of salt
  • 4 gallons of cabbage, red and green, finely shredded
  • 1 gallon of carrot, grated
  • 4 cups of red onion, finely sliced
  • 9 cups of golden raisins
  • 1 gallon of pears, thinly sliced or julienned

Steps

  1. Combine mayonnaise, yogurt, rice wine vinegar, sugar and salt and whisk smooth.
  2. Mix cabbage, carrots, onions and raisins until ingredients are well distributed.
  3. Pour dressing over cabbage and mix to evenly coat.
  4. Add pear julienne or slices and gently toss to coat with dressing and evenly distribute throughout slaw.
