Red Monster Soup

Serving: 3/4 cup (Yield: 12 servings)

Ingredients

  • 1 cup of onion, chopped
  • 2 Tbsp of olive oil
  • 1 cup of carrots, chopped
  • 2 cups of tomatoes, chopped
  • 2 of bay leaves
  • 1 tsp of thyme
  • 1 tsp of parsley
  • 1 tsp of sugar
  • 6 cups of chicken or vegetable broth, canned, reduced sodium
  • 4 ½ cup of yogurt, plain, low-fat
  • 1 tsp of black pepper

Steps

  1. In a large stockpot, sauté onion in olive oil over medium heat, until clear (about 5 minutes).
  2. Add broth, carrots, tomatoes, bay leaves, thyme and parsley.
  3. Allow to simmer for 25 minutes.
  4. Allow soup to cool.
  5. Stir in sugar, pepper and yogurt.
