Sautéed Collard Greens with Sweet Tomato

Serving: 100 SERVINGS (K–5) SERVING SIZE: 4 OUNCES

Ingredients

  • 1 cup of vegetable oil
  • 14 pounds of collard greens, chop and include most of the stems
  • 2 cups of whole cloves
  • ½ cup of minced fresh ginger
  • 2½ tablespoons of dried ground ginger
  • 2 tablespoons of cinnamon
  • 2 tablespoons of ground cumin
  • 1 cup of cider or white vinegar
  • 4 cups of raisins (optional)
  • ½ cup of honey
  • chopped or diced tomatoes of 17 cups (142¾ ounces)
  • salt of 1 tablespoon
  • pepper of 2 teaspoons (to taste)

Steps

  1. In a large pot or tilt skillet over medium heat, add the oil. Add the onions and sauté until they begin to brown.
  2. Add the collard greens, minced garlic, ginger, cinnamon, and cumin and cook, stirring for 5 minutes.
  3. Add the vinegar and 1 cup water.
  4. Turn the heat to low and cook the collards for 10 minutes, stirring occasionally.
  5. Add the honey, tomato, salt, and pepper.
  6. Taste for seasoning.
