Strawberry Basil Quinoa Salad

Ingredients

  • 5.5 quarts of Strawberries, fresh & diced
  • 3.5 quarts of Quinoa, dried
  • 3 cups of Pistachios (optional), chopped
  • 2 cups of Basil, fresh, chopped
  • as needed of Salt & Pepper
  • 2 cups of Feta Cheese (optional), crumbled
  • of Dressing
  • 1 cup of Olive Oil
  • 1/3 cup of Lemon Juice
  • 2 TB of Maple Syrup
  • 1/2 tsp of Salt
  • 1/2 tsp of Pepper

Steps

  1. Prepare quinoa according to package directions; set aside.
  2. In a large mixing bowl, add all ingredients and gently stir.
  3. In small mixing bowl, whisk together dressing ingredients.
  4. Garnish with basil leaves and feta cheese (optional).
