Apple, Ham, and Spinach Wrap

Serving: 50 (1 wrap)

Ingredients

  • 12 medium of apples, raw
  • 1 oz of lemon juice
  • 50 (10" diameter) of whole wheat tortillas
  • 100 slices of ham, sliced
  • 12.5 cups of baby spinach

Steps

  1. Prep apples: peel, core, and slice thinly.
  2. Toss with lemon juice to prevent discoloration.
  3. Lay out whole grain tortillas on clean surface. Add 2 oz. of ham, several slices of apple, and 1/4 cup of baby spinach.
  4. Wrap tightly, slice on bias, and serve.
  5. Hold for cold service at 41°F or lower.
