Tomato & Brown Rice Soup

Ingredients

  • 1 of yellow onion, chopped
  • 6-1/2 cups of water
  • 15 ounces of navy beans, canned
  • 3/4 cup of brown rice, uncooked
  • 1-1/2 lbs of fresh tomatoes, chopped
  • 2/3 cup of celery, diced
  • 1 TB of italian seasoning
  • 1-1/2 tsp of garlic, granulated
  • 1/2 cup of basil, fresh, chopped
  • 1 TB of olive oil

Steps

  1. Heat oil in a soup pot over medium-high heat. Add the onion and cook while stirring for about 3 to 5 minutes.
  2. Add the water, beans, rice, diced tomatoes, celery, Italian seasoning, and granulated garlic, and bring to a boil, uncovered.
  3. Reduce the heat to low then cover and cook for 30 minutes.
  4. Stir in the basil toward the end of cooking.
