Sweet Butternut Mash

Serving: 50 (1/2 cup portions)

Ingredients

  • 15 lbs, 10 oz of Butternut Squash, fresh, cubed
  • 6 oz of Butter
  • 3 TB of Brown Sugar
  • 2 tsp of Salt
  • 1 tsp of Cinnamon
  • 1 tsp of Black Pepper

Steps

  1. Steam squash until soft. Will take between 10-30 minutes. Heat to 140F.
  2. Mash squash until smooth.
  3. Mix in butter, then brown sugar, salt, cinnamon, and pepper.
